Very basic and low-touch method for making vegetables in the oven of any size, including a toaster oven. here is how to do it:
Veggie mixes:
broccoli, cauliflower, red onions
Chinese eggplant, garlic cloves, shallots, peppers, uncut parsley
sauce:
Oil and spices
oil, mustard, spices
oil, balsamic vinegar, spices
pesto
- heat the oven to 400F
- wash, peel and cut vegetables
- in a large bowl mix vegetables with sauce.
- spread on the baking sheet in one layer, skin side down. Bake for 40 to 50 minutes .
